Kanpai or Kampai if we translate it to the practical meaning, it would mean "toast" or "cheers", but if we look at the kanji it has a more interesting meaning. 乾, the first kanji is used for example in the word 乾く (かわく, kawaku), which means "to dry up". 杯, the second kanji, is mostly used as a "wine cup" or an "alcoholic drink cup".
So, if we join both meanings and add a little feeling, it would mean "let's dry up our glasses!"
